Bean Casserole

1 pound  ground beef  
1 medium onion  

 Brown both the beef and onion in a skillet and drain off fat.  

2 cans  pork and beans  
1 can kidney beans  
½ cup brown sugar  
¼ cup  catsup
¼ cup  bar-B-Q sauce
1 can pineapple tidbits, drained  
¼ cup water  
salt to taste  

Mix all together and bake at 350 degrees for approximately 45 - 50 minutes or till done.  

Corn Fiesta Casserole 

1 Tablespoon  vegetable oil  
2 Tablespoons diced onion
2 Tablespoons chopped pimentos  
¼ cup chopped green pepper  
1 cup fresh or frozen corn  
1 cup  cooked pinto beans  
¼ teaspoon each  cumin and chili powder  
2 Tablespoons butter 
1 Tablespoon whole wheat flour  
2 cups

milk

1 cup yellow corn grits  
1 ½ pounds grated cheese  

Sauté onion in oil till tender; stir in next five ingredients and heat through.  Melt butter in saucepan, stir in flour; slowly add milk and grits.  Stir until thick, mix in vegetables and one cup cheese.  Pour into square baking dish.  Sprinkle with ½ cup cheese and bake at 350 degrees F. for 40-45 minutes.  

Four Bean Casserole

From Grandma Lefebvre
½ pound diced bacon
1 ½ pounds hamburger

Fry bacon until crisp.  Remove bacon from pan and brown the hamburger.  Add the chopped onions and fry. Add the remaining ingredients. 

1 can butter beans  
1 can  kidney beans  
1 can green lima beans  
1 can Pork 'n Beans  
1 clove garlic, minced  
large chopped onions  
¾ cup catsup
1 teaspoon  salt  
2 teaspoons dry mustard 
¼ cup vinegar
1/3 cup brown sugar  

Put in a large casserole dish.  Bake at 350 degrees for 1 hour.  

 

Sausage Breakfast Casserole

6 slices bread  
1# pork sausage in bulk (Turkey sausage is just as good!)  
1 ½ cups( 6 oz.)    shredded cheese 
6  eggs, beaten  (Use Egg Beaters)  
2 cups  half 'n half (Condensed skim milk is an excellent low cholesterol substitute!)  
1 teaspoon  salt (This can be easily omitted without much change in the flavor.)  

Combine the eggs, half 'n half, and salt.

Remove crusts from bread and spread with butter.  Place in greased 9"X13" pan.  Brown the sausage, crumble, drain well.  Spoon over bread, sprinkle with cheese.  Pour over the egg and half 'n half mixture.  Chill overnight in the refrigerator.  Remove from the refrigerator about 15 minutes and let it warm up a little.  Bake at 350 degrees for 45 minutes.   

 

Tommy's Casserole 

From Grandma Lefebvre  
1 pound hamburger  
1 pound ground pork  
1 onion chopped  
10 ounce package noodles, cooked
2 beaten eggs 
1 can tomato soup  
4 ounces shredded cheddar cheese  
1 can creamed corn  
1 teaspoon salt  
½ teaspoon pepper  

2 cans cream of mushroom soup---Do NOT add to casserole!!  Heat this undiluted and spoon over each serving.

Brown meat.  Cook noodles.  Combine all ingredients and place in 9X13 inch baking pan.  Bake uncovered 2 hours at 325 degrees F.  Cut into serving pieces and serve topped with the mushroom sauce.
